Fabbi Aceto Balsamico Vinegar

Franco Fabbi's historic vinegar factory or “acetaia” is perfectly situated in a splendid 18th century villa in Collegara Italy, in the outskirts of Modena. Franco inherited his first precious barrels of balsamic vinegar from his grandfather Giambattista, who had lavished all his loving care and attention on these late 19th century gems. The number of barrels was subsequently increased by Bruno, Franco's father, with new barrels all made from high quality wood. Since then the tradition has been handed down to successive generations of the Fabbi family with the recipes passed down by word of mouth making the process of Traditional Balsamic Vinegar of Modena a real passion and a secret. The vinegar factory flourished under the patient care and generous skills of Franco and his efforts were rewarded with a prize at the 1976 Spilamberto Fair where his vinegars were recognized as the best traditional balsamic vinegar for that year. Today, Bruno’s historic vinegar factory can count over 1,300 barrels organized and cared for in conformity with all the traditional rules and canons of Balsamic Vinegar making. This marvelous factory with its stupendous location and the absolute perfection of its balsamic vinegar makes the Fabbi family balsamic vinegar a must for every occasion.

The Vinegars

The TRADITIONAL or “Tradizionale”, and that’s the word to look for, BALSAMIC VINEGAR OF MODENA starts out from cooked grape must that is reduced by more than half to a thick dark syrup which then goes through a natural fermentation and acetification process. Subsequently the Aceto Balsamico Tradizionale is aged for a very long time in a series of barrels made of different woods. Each year the vinegar is transferred to different and smaller barrels without the addition of any flavorings. Its color is deep and shining dark brown and the vinegar has beautiful smooth syrup-like consistency. It has a very characteristic aroma which is complex, sharp, and pleasantly acidic. The Fabbi family’s Aceto Balsamico Tradizionale is truly exquisite!
